Farm-to-table before it was a trend
Long before 'farm-to-table' became a menu cliché, Vermont was living it out of necessity and pride. A short growing season, strict land-use rules and a stubborn independent streak built a food culture rooted in small farms and small batches — and today the state produces world-renowned maple syrup, award-winning cheese and some of the most sought-after beer in America.
This is the essential Vermont food bucket list, built around the three things the state does better than anywhere: liquid gold, world-class brews and artisan cheese.
Liquid gold: maple
Vermont makes over half of all pure maple syrup in the United States. During sugaring season — late February through April, when freezing nights give way to thawing days — sap runs from tapped sugar maples through miles of tubing into wood-fired evaporators, where it takes roughly 40 gallons of sap to make a single gallon of syrup. Visit a sugarhouse during Maple Open House Weekend in March for free tours, tastings and fresh maple cotton candy.
Don’t leave without a maple creemee — a rich maple soft-serve — or sugar-on-snow, hot syrup poured over fresh snow to a taffy chew, traditionally served with a sour pickle and a plain donut to cut the sweetness.
World-class brews
Per capita, Vermont has more breweries than any US state, and it is the birthplace of the hazy, juicy New England IPA — unfiltered, low-bitterness, intensely aromatic. Several of its breweries are regularly ranked among the best on earth, and a beer trip here is a genuine pilgrimage.

Vermont has more artisan cheesemakers per capita than any state, and the Vermont Cheese Trail links dozens of them for farm-gate tastings and sales. It is a delicious way to drive the back roads.

Cider, coffee & sweets
Beyond the big three, Vermont’s food scene runs deep. Citizen Cider and Shacksbury lead a hard-cider revival from Champlain Valley orchards; Ben & Jerry’s began in a Burlington gas station and still runs its factory tour in Waterbury; and King Arthur Baking in Norwich draws bakers to its store and cafe. Farm stands, farmers' markets and the state’s food co-ops tie it all together, often on the honor system with a cash box on a dirt road.
Planning a food trip
The tastiest bases are Waterbury (Ben & Jerry’s, Cold Hollow Cider, The Alchemist, Hen of the Wood), the Mad River Valley (Lawson’s and farm tables), and the Northeast Kingdom around Greensboro (Hill Farmstead and Jasper Hill). Sugaring peaks in March, cheese and cider are year-round, and beer releases can draw lines — check brewery hours and release days before you go. Come hungry, drive carefully, and bring a cooler.
